Commercial kitchens in professional environments can be somewhat more hectic and demanding than your standard home environment. So it may be a bit of a shock to you when you first enter the professional catering world.

Everyone in the catering industry has been in the same situation as you though so there’s no need to worry. Remember the following advice and you’ll start your journey into catering with a spring in your step!

Stay Calm

It’s easier said than done but keeping a clear head when working in a commercial kitchen is going to save you a lot of time. Don’t worry about making mistakes as worrying will only make you more prone to error. Everyone makes mistakes and everyone learns from them.

Commercial kitchens aren’t how they look on TV. A calm, collected & efficient kitchen environment is free from the shouts of stressed head-chefs & panicky cooks. Project an air of confidence and your team will remain calm, trusting in your obvious skill as a chef.

Make sure you’ve done the following before your first shift:
• Memorise where everything is located in the kitchen
• Know who to turn to if there’s a problem or obstacle in your work load
• Understand your ‘call out’s’ so you and your team stay as safe as possible
• Do your homework on the menu and how each is prepared

Keep Hygiene As Your Top Priority

At the end of the day, the food you prepare is going to be consumed by the general public who expect clean and risk free dishes. Keep your work station clean and make sure you’re keeping both yourself and customers safe.

Cleanliness doesn’t just stop on the work surface though. Floors, walls, ceilings and even the air you’re breathing needs to be kept at an acceptable cleanliness. If any of these are being ignored, something needs to be done about it!
